The difference between sunny cafe Flamingo and cocktail bar Stay Gold is, well, night and day. Fuel up on coffee at the former before ducking behind the curtain for a neon-washed evening of tipples. Jackson Pollock-inspired uniforms, metallic ceilings and a glowing line from a Robert Frost poem add a certain flare, but drinks remain classics-driven creations. The Alexander Frappe, a modern twist on the Alexander, is enriched with chocolate chai syrup and cacao brun, and topped with pistachio cream. For something stiffer, try the bracing Trinity Martini, served with capers, lemon zest and an olive. Unlike many bars, bites from Japanese-Filipino chef Joanne Sakai dare to be different – fun, punchy and perfect for late night munchies. Her signature fish tacos, made with local red snapper, sambal matah and jalapeño coriander mayo, are a hot favourite. For something lighter, go with the Sugbaw-Kilaw with roasted prawns and crab, and yuzu tobiko.
