Review: Torno Subito – Playful Italian Dining in Dempsey Hill

Located amongst the lush greenery of Dempsey Hill, Torno Subito brings a playful, Italian coastal vibe to Singapore’s dining scene. Part of celebrity chef Massimo Bottura’s international portfolio, this restaurant channels the spirit of a classic Italian trattoria with a modern twist. Its retro-inspired décor, open kitchen and lively atmosphere make it a conducive spot for both casual gatherings and special celebrations. Torno Subito’s menu focuses on approachable yet inventive dishes, often blending Italian tradition with local flavors in unexpected ways. In that sense, one should not come here expecting the usual Italian classics.

I came here during a Saturday evening. I was amazed by the expansive space – something that few, if at all, Italian restaurants in Singapore possess. Both sides of the restaurants were flanked by columns that reached out to the high ceiling. Blues and reds permeated the restaurant’s interiors, with a few art works here and there adding a nice touch. For this particular occasion, I tried dishes from their revamped ala carte menu. 

The meal began with Zuppa Fredda (S$24), a chilled beef tomato and strawberry gazpacho that balanced sweet and savory notes beautifully. Cucumber “spaghetti” added crunch, while tomato sorbet enhanced the dish with a bright, refreshing finish.

The I Love Pepper Crab (S$88) was undeniably generous, with fresh Chitarra pasta and small but copious chunks of Alaskan king crab. The Sarawak pepper reduction provided a pleasant kick, but the intensity of the pepper sometimes overpowered the delicate sweetness of the crab. Chives and lime helped lighten the dish. It was on the richer side overall.

Box 4

The Cacio e Pepe (S$62) offered creamy comfort elevated with shavings of Australian black truffle. The pasta was perfectly cooked and the white sauce was classic. The truffle aroma was just right and did not mask the creamy ensemble. This was indulgent and satisfying.

The Porchetta (S$98), served for two, was a feast for the eyes. The milk-fed suckling pig was served on a plate adorned with flowers before being transferred to a normal serving plate. The pork itself was tender to the point that it was almost sausage-like in texture, paired with a sweet peach compote and earthy Swiss chard. It was hearty and sharable – something to order to impress. 

Desserts continued the theme of “tradition in evolution.” The Tiramisubito (S$22) offered a modern take on the classic tiramisu, with layers of coffee, mascarpone, and cacao that were both familiar and refined. This is not a traditional tiramisu per se, as the coffee-soaked sponge is replaced with ice cream in this case. 

The Cocco Bello (S$20) was a refreshing tropical dessert: pineapple salad paired with lemon-mint sorbet, foamy coconut, and kaffir lime meringue created a refreshing, airy finale.

Overall, Torno Subito delivers a dining experience that is stylish, creative, and fun, though a few dishes can lean toward theatrics. Prices are on the higher side but those who come will be rewarded those looking for inventive spins on Italian classics.
