As a Marine Stewardship Council global ambassador, Chef Ferrari infuses every creation with his commitment to sustainability. Partnering with The Fish Farmer, a leading local aquaculture producer, Laurus Table sources sustainably farmed seafood complemented by organic produce from regional growers and herbs harvested daily from the resort’s on-site garden.
The Star Behind the Stove
Born in Lecco, Italy, Chef Fabrizio Ferrari earned his first Michelin star at just 28 and maintained it for 15 consecutive years at his family restaurant Al Porticciolo 84. Known for his scientific approach to cooking and creative flair, he has honed his craft under culinary legends such as Mauro Uliassi of the three-Michelin-starred Restaurant Uliassi in Senigallia.
Now based in Seoul, where he runs Fabrizio’s Kitchen and teaches culinary arts, Chef Ferrari continues to bridge cultures through food. His Netflix appearance on Culinary Class Wars and his popular YouTube channel, inspired by Korean chef Paik Jong-won, have further elevated his reputation as a global tastemaker and sustainability advocate.

- Branzino in crosta di sale, finocchietto e limone – sustainably farmed seabass baked in a sea salt crust with fennel and lemon, evoking the coastal aromas of Amalfi.
- Scialatielli ai Frutti di Mare al cartoccio – fresh scialatielli pasta tossed with seafood and rich sauce, unveiled tableside for a dramatic finish.
- Mafaldine al burro, limone e alici – mafaldine pasta with a creamy Amalfi lemon and anchovy sauce, enriched with Limoncello and wild fennel.
