Ensconced within the Four Season Hotel Singapore, the elegant bar is serving up handcrafted cocktails inspired by the Chinese, Malay, Indian, and other ethnic communities. Led by head bartender Sophia Kang, the thoughtfully constructed menu includes flavourful tipples such as the Kelapa Old Fashioned, made with bourbon sous vide with toasted coconut, and the aromatic spice of Rojak Sour, which incorporates falernum, shrimp and pineapple. On fine days, its botanical ‘secret garden’ is a charming al fresco space for afternoon tea. Bites are just as elevated – try the Golden Nasi Goreng Arancini, served with a delectable peanut sauce mayonnaise. It’s rare to find a bar that incorporates local flavours with such finesse and restraint, but One-Ninety hits all the right notes and more.
