Tucked into Federation Square, Big Esso showcases the bold, unique flavours of Indigenous cuisine. Settle into a high table or comfy wooden banquette, order a drink from a list of Indigenous-owned businesses, and try an assortment of dishes you won’t find anywhere else. There is a strong focus on native Australian meats, like in the smooth tartare made from sustainable kangaroo enlivened with a spicy salsa verde and green ants (which give a tart, lemony flavour). Meanwhile, the skewers are melt-in-the-mouth morsels of crocodile tongue with a kick of red curry paste.
