Nestled in a quiet enclave in Holland Village, Chip Bee Bistro is shaping up to be one of Singapore’s best all-day dining destinations. Dressed in rich teak and furnished with Italian glassware, Czech bistro chairs and artisanal fabrics, it exudes an easy sophistication ideal for leisurely brunches. Start fresh with the Tomato & Stracciatella, a riff on the classic Caprese with onzu-marinated Roma and Chitose tomatoes. To share, the crispy five-spice and fish sauce-marinated split chicken wings are a standout; bite-sized, golden brown and irresistibly moreish.
Just be sure to leave room for mains: the pastas, like the Casarecce with prawn, crab and lobster bisque, are satisfying and well-executed. For something heftier, the 12-hour slow-cooked Berkshire pork belly is a bona fide crowd-pleaser – rich, succulent, with a bright tanginess from its chilli-and-lime glaze. Cocktails, designed with bar veteran Jay Gray, are just as accomplished. The refreshing Arveau Pineapple Spritz, zesty and lightly sweet, is the perfect pick-me-up on hot days. It’s built on Arveau, a local amaro with ginseng root, calamansi and torch ginger, made by independent craft distillery Distillius.
