This October, Singapore’s dining scene is alive with the flavours of Spain as the Eat Spain Drink Spain 2025 campaign returns, bringing together a curated selection of restaurants and wine partners to celebrate the richness of Spanish cuisine.

One of the highlights is Movida Singapore, a tapas and sharing-plate restaurant helmed by award-winning chef Frank Camorra.

Chef Frank Camorra, born in Barcelona and raised in Australia, is passionate about combining the best of both worlds. Having honed his skills in top Melbourne kitchens and traveled extensively across Spain, his approach is to emphasise fresh, high-quality Spanish produce and traditional techniques, interpreted with a modern sensibility. Upon entering Movida, guests are greeted by a warm and inviting taverna-style setting. The interior design evokes rustic charm with exposed brick walls, wooden furnishings, and soft lighting that create a cosy, intimate atmosphere.

As part of our visit for Eat Spain Drink Spain 2025, we had the pleasure of sampling a thoughtfully curated menu paired with Bodegas Roda Sela 2023, a Rioja red wine curated by ewineasia.com, one of Asia’s premier purveyors of artisanal and boutique wines. The dishes we savoured showcased the diversity of Spanish cuisine, ranging from rich, cured flavours to light, vibrant seafood creations.

We began our dinner with the Pan Con Manteca Colora, a deceptively simple dish of sourdough bread topped with sobrasada butter.

Sobrasada, a traditional Spanish sausage from Mallorca, is made from finely ground pork, paprika, and a blend of spices, resulting in a creamy, spreadable paste with a deep, smoky flavour. When combined with the tangy, crusty sourdough, the dish delightfully awakened our palates.

The butter’s richness, paired with the bread’s subtle sourness, made it a perfect opener, presenting something small yet memorable.

Next, we enjoyed the Jamon Iberico, featuring Blazquez 100% Jamon Iberico de Bellota aged 36 months and served with pan Catalan.

Jamon Iberico is widely regarded as one of the finest hams in the world, prized for its delicate, nutty flavour and melt-in-the-mouth texture, a result of the pigs’ acorn-rich diet.

The accompanying pan Catalan is a rustic bread rubbed with ripe tomatoes and drizzled with extra virgin olive oil.

The interplay between the ham’s savoury richness and the fresh, slightly acidic tomatoes creates a sublime balance, a simple dish that epitomises the elegance of Spanish tapas.

Next, for seafood enthusiasts, the Cangrejo packs a delightful pocket-size punch. This dish features a warm crumpet topped with spanner crab, saffron emulsion, and finger lime.

The Bomba which came together with the Cangrejo, is a playful homage to Catalan comfort food. This potato bomb is filled with chorizo and topped with mojo picon, a spicy Canary Island dressing.

Our next dish, the Pulpo, showcased Spanish octopus cooked over coals to achieve a smoky, tender finish. Served with pork sobrasada sauce and potato, the octopus is perfectly charred while remaining succulent inside.

No Spanish meal would be complete without Paella, and Movida’s Paella De Senorito, or “Gentleman’s Paella,” was a fitting centerpiece. A Spanish friend at our table even shared that this is one of the best paellas he have had in Singapore for its authentic, homely flavours.

Made with bomba rice cooked in saffron, calamari, barramundi, and smoked prawns, the dish is aromatic and visually stunning.

The rice absorbs the flavours of the seafood perfectly, while the saffron adds an earthy, floral note. Presented together with the pungent rosemary herb infused into the dish, each mouthful presents something truly celebratory. Each bite is a reminder of why paella remains one of Spain’s most iconic culinary exports.

To complement the meal, we paired our tapas with Bodegas Roda Sela 2023, a Spanish Rioja red wine. Crafted predominantly from Tempranillo grapes, with a small proportion of Graciano and Garnacha, the wine is produced from sustainably managed vineyards with vines aged 15 to 30 years. Its fermentation occurs spontaneously in French oak vats, followed by 12 months of barrel aging, resulting in a wine that is fresh, balanced, and elegant.

On the nose, the Roda Sela 2023 offers aromas of ripe red berries, subtle herbs, and delicate mineral undertones. On the palate, it is vibrant with lively acidity, creating a balance that pairs well with the rich and varied flavours of Movida’s Spanish food offerings.

For diners seeking an authentic taste of Spain in Singapore, Movida offers a combination of traditional Spanish techniques, modern interpretations, and thoughtfully curated wine pairings, ensuring every visit is a celebration of the senses.
