Hotpot lovers in Singapore have a new reason to celebrate with the opening of Broth & Beyond at CHIJMES.
This fresh culinary venture seeks to present Yunnan’s famed ecological hotpot in Singapore, combining premium ingredients, all-natural broths and an inviting dining atmosphere, all at wallet-friendly prices, including a 50% off opening promotion.
Inspired by Yunnan’s pristine landscapes, Broth & Beyond adopts a “natural, green, and healthy” culinary philosophy. The broths are prepared daily using fresh ingredients sourced directly from Yunnan’s highlands for authencity, sans any artificial preservatives.
Signature broths from the menu includes the like of their Signature Black Truffle & Eight-Mushroom Broth, simmered for eight hours with earthy Yunnan mushrooms and finished with tableside truffle additions; the Golden Fungus Chicken Broth which blends locally sourced chicken with dried scallops and golden fungus; and the Coconut Chicken Broth, made with 100% pure coconut water.
During a dinner tasting, we tried the first two broths, along with a selection of their signature dishes as below:
Signature Black Truffle & Eight-Mushroom Broth: Simmered for eight hours, this brew is crafted from premium chicken fat and infused with eight varieties of Yunnan mushrooms. Tableside, black truffle and truffle paste are presented in a glass jar to be added into the broth as a theatrical touch.Signature Golden Fungus Chicken Broth: This broth is made with 15kg of locally sourced old hen and 30kg of chicken meat, blended with Yunnan golden fungus and mushrooms and dried scallops to present both flavours from the land and the sea. Thick and smooth, we love the creamy richness of this broth. Fragrant Fermented Beancurd Chicken Wings: The chicken wings are marinated with a house blend of Yunnan spices and fermented beancurd, then coated with a thin batter and deep-fried upon order. These are served piping hot, delivering both crisp and punch. Braised Pork Innards Claypot: If you love pork innards, this is a must-try with its strong, rich flavours and assortments of ingredients to dive into.Yunnan Delicacy Mushroom Platter: Freshly air-flown daily, Broth & Beyond’s selection of premium mushrooms travels from Yunnan’s pristine mountains to your table in just one day.Pork & Beef Platter: Features a delicious selection of tender pork belly, juicy pork collar, and flavourful beef tongue. Overall, Broth & Beyond delivers reasonably quality ingredients at accessible prices, presenting a modern take on Yunnan hotpot. The restaurant is open till the wee hours of 2.30am and is in a convenient, centralised location, perfect for late-night group gatherings.
For an additional S$4.99, diners get access to their Buffet Market Table, featuring over 50 sauces, condiments, and desserts. Highlights include the likes of their ice jelly with panda marshmallows and soft serve to provide a playful end to the meal.
